Application in meat

  In the production of sausage, luncheon meat, meatballs, fish meat and other meat products, often need to add the

right amount of starch as filler. MF-4 type can prevent starch retrogradation, aging and improve the sense of food. At

the same time, due to the emulsifying effect of MF-4, the fatty raw materials can be better dispersed, firmly combine

with water and starch, and inhibit the phenomenon of water drainage, shrinkage or hardening.


Usage and dosage

Method 1:

   Because glycerin monostearate is easily soluble in grease, the method is applicable to margarine, pastry oil and other products by melting glycerin monostearate together with grease, stirring and mixing, and then feeding.The purpose of

emulsifying is to blend monoglycerides in the oil phase for emulsifying purposes.


Method 2:

  Monostearate powder and other raw material powder (such as flour, milk powder) are directly mixed and mixed, and

then made into various products according to law.


Method 3: 

hydrate is made and then put into use. The specific steps are as follows:

  1.Put a mono-stearate in a container and melt it into liquid by electric furnace or other heating method.

  2.Will be 4-5 copies of about 70 ℃ hot water to join high-speed mixer or egg machine, start the mixer, the roiling hot

water;

  3.The melted liquid mono-stearate (or, if the equipment is good, beads or powder mono-stearate) is slowly added to

the hot water being stirred to form a milky white hydrate paste that is cooled to room temperature for later use.


Advice:

  Because the emulsifying effect is affected by many factors, such as equipment, process materials, etc., in order to

give full play to the role of monostearate glyceride, the user is suggested to use method 3, and the emulsifying effect is the most ideal.This is because the surface of monostearate hydrate is about 700 times larger than that of

spray-crystallized monostearate powder, which is conducive to the dispersal of monostearate in the water base.


Usage:

  The dosage ratio is 0.3-0.5% (according to the weight of raw materials in the product formulation). If the product

contains more oil, protein and other ingredients, or contains raw materials that are not easy to be emulsified, the

dosage of glycerin monostearate should be increased to 1%-5%.
