MF-2 is used in contract with sucrose ester, propylene glycol ester and other emulsifiers as foaming agent for cake.
MF-2 can promote the foaming property of protein, and form the complex of "protein-monoglyceride" when making cakes, which can effectively help the cake to disturb the foaming and produce stable bubble film, so as to make cakes with stable small bubbles and significantly increased volume.
